LEMON THINS (Cuisinart)

Ingredients

  • 4 ounces of butter
  • 4 ounces of sugar
  • 1 egg
  • grated rind of a lemon
  • 1 teaspoon baking powder
  • 1 cup of flour
  • pinch of salt

Preparation

Step 1

1. Combine butter and sugar and process until the mixture is light and fluffy.
2. Add the egg and lemon rind and continue until well mixed.
3. Add the salt, flour and baking to the ingredients and process well mixed.
4. Turn the dough on floured surface and roll into a large sausage 2 inch diameter.
5. Wrap in tinfoil and freeze for 2 hours.
6. Unwrap and cut into thin slices.
7. Bake on a greased baking sheet at 350 for 20 minutes or until crisp and light golden brown.
