Ingredients
- 1/4 c. low-fat granola
- 1/2 c. buttermilk
- 1/3 c. brown sugar
- 2 T. canola oil
- 1 t. vanilla
- 1 egg
- 1 c. whole wheat flour
- 1/2 c. baking soda
- 1/2 t. cinnamon
- 1/8 t. salt
- 1 c. mixed berries(blueberries, raspberries or black)
Preparation
Step 1
Heat oven to 350*. Spray 8 or 9" pan with Pam. Place granola in ziplock and slightly crush with rolling pin. Set aside.
In large bowl, stir buttermilk, brown sugar, oil, vanilla and egg until smooth. Stir in flour, soda, cinnimon and salt just until moistened. Gently fold in half of the berries. Spoon into pan. Sprinkle with remaining berries and granola.
Bake 28 to 33 minutes or until golden brown and top springs back when touched. Cool in pan 10 minutes. Serve warm.
