Mario Batali's Mashed Turnips and Potatoes

Ingredients

  • 2 bunches Turnips
  • 1 pound Yukon Gold Potatoes (peeled and quartered)
  • 4 tablespoons cubed Butter
  • 2/3 cup Whole Milk (scalded)
  • 1/2 cup Creme Fraiche
  • 1/4 cup grated Parmesan
  • 1/4 cup Grain Mustard
  • Salt and Pepper to taste
  • 1/2 cup sliced Scallions

ingredients 2 bunches Turnips
1 pound Yukon Gold Potatoes (peeled and quartered)

instructions Peel the turnips and quarter them if they are large, halve them if they are small. Combine the turnips and potatoes in a steamer set over 2 inches of boiling water. Steam until tender, about 20 to 25 minutes.

ingredients 4 tablespoons cubed Butter
2/3 cup Whole Milk (scalded)
1/2 cup Creme Fraiche
1/4 cup grated Parmesan
1/4 cup Grain Mustard
Salt and Pepper to taste
1/2 cup sliced Scallions

instructions Empty the water out of the pot and add the potatoes and turnips back in. Mash in the butter and hot milk. Add the creme fraiche and then stir in the Parmigiano and mustard. Season with salt and pepper. Stir in the scallions and serve.
