Chocolate Zucchini Cake

This is so good some folks buy 2 at a time!

Ingredients

  • Cream Cheese Frosting:
  • 8 eggs, beaten
  • 3 cups oil
  • 6 cups sugar
  • 6 cups grated zucchini
  • 6 cups flour
  • 3 tsp baking powder
  • 2 tsp baking soda
  • 3 tsp cinnamon
  • 4 Tb cocoa powder
  • 1 Tb butter, softened
  • 2 tsp salt
  • 1 cup nuts
  • 16 oz. cream cheese, softened
  • 8 Tb butter, softened
  • 8 cups powdered sugar
  • 2 tsp vanilla

Preparation

Step 1

Cake:
Mix eggs, oil sugar & butter, beat. Combine dry ingredients & slowly add to wet. Fold in nuts.
Bake at 350 degrees for 40-60 min.
Cool.
Frosting:
Beat together ingredients & top each of the cooled cakes.
