Take the best part of nachos, mix it with the best part of loaded potato skins and you have Irish Nachos. It's the perfect mix of fake Mexican and fake Irish cuisine.
They were supposedly invented at J. Gilligan's Bar & Grill in Arlington, Texas in 1979. You take some cottage or waffle fries and cover them in cheese, bacon, jalapenos, sour cream, tomatoes, and chives. They make the perfect Super Bowl snack.

Guess you have to use your imagination.
I would probably cook the potatoes partially in the oven, add toppings and finish off in oven??
