Ingredients
- 2 cups butternut or acorn squash
- 1 large sweet potato, peeled, cut into 1” cubes
- 1/3 cup orange juice
- 1/2 tsp. each cinnamon and ground ginger
- 1 tsp. cornstarch
- 2 Tbsp. Mazola canola oil
Preparation
Step 1
Preheat oven to 375. Combine squash, sweet potato and apple in a large bowl.
Combine orange juice, seasonings and cornstarch in small bowl. Blend in oil
Coat vegetable/fruit mixture with juice mixture.
Bake for 30 minutes or until veggies and fruit are cooked through and tender.
