Broccoli Soup

Ingredients
- 2 tsp olive oil
- 1 cup onion - chopped
- 1 garlic clove
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp thyme
- 2 can chicken broth
- 1 cup water
- 1/2 lb. potatoes - cubed
- 1 head broccoli - cut into 1" pieces

Preparation
Step 1
Heat oil and saute onions, garlic, salt, pepper and thyme until onions are tender.
Add chicken broth and water.
Add potatoes and bring to a boil again.
Reduce heat and simmer uncovered until potatoes are tender - about 5 minutes.
Add broccoli and cook until tender.
Puree and season to taste with salt and pepper.
