  • 4 Boneless, skinless chicken breasts, (flattened slightly)
  • 1/2 tsp. ground pepper, divided
  • 1/4 tsp. salt
  • 1 cup shredded swiss cheese
  • 3oz pkg. cream cheese, softened
  • 1/2 cup fine bread crumbs
  • 1 tbsp thyme
  • 4 tsp olive oil, divided
  • 1/2 cup chopped ham

Step 1

Preheat oven to 400 F. Sprinkle chicken with 1/4 tsp pepper and salt. Combine swiss cheese and cream cheese in a bowl. Combine the remaining pepper with bread crumbs, thyme and 2 tsp. oil in another bowl. heat the remaining oil in a large oven proof nonstick skillet over medium heat. Cook chicken until browned on both sides, about 2 minutes per side. Move the chicken to the center so all pieces are touching. Spread with cheese mixture, sprinkle with ham, then top with breadcrumbs. Bake until the chicken is no longer pink in the center, about 5-7 minutes. (165 F internal temperature)
