Ranch Style Mock Mashed Potatoes
- 1 head cauliflower, washed and broken into pieces
- 1 c hidden valley light ranch dressing
- 1 T fat free milk
- 1 T light margarine or butter
- 1/4 t salt
Place florets into a steamer and cook for about 20 minutes or until tender. Transfer to a food processor.
Add dressing, milk, margarine to cauliflower and blend until the mixture reaches the consistency of mashed potatoes. Add salt to taste.
