Brunch Enchiladas

Ingredients

  • 2 c cup up ham
  • 1/2 c diced onions sauted’
  • 1/2 c chopped green pepper
  • 2 c shredded cheddar
  • 8 7” corn tortillas
  • 4 beaten eggs
  • 2 c half and half
  • 1 T flour
  • 1/4 t salt
  • 1/4 t garlic powder

Preparation

Step 1

Mix together first 4 ingredients. Place approximately 1/3 c or more along center of each tortilla. Roll up. Place in pan side by side. Cover. Refrigerate overnight. When ready to serve mix together eggs, half and half, flour and seasoning. Pour over tortillas. Bake at 350 for 35-40 minutes.
