Ingredients
- Dressing:
- 1/4 c fresh lime juice
- 1 T light soy sauce
- 1 tsp sesame oil (olive will do)
- 1 T sugar
- 1/2 tsp crushed red pepper (or more to taste)
- 1/4 tsp salt
- 3 mangos (firm, ripe, peeled, chopped)
- 1 c blueberries
- 1 large red pepper chopped
- 1/2 c red onion, finely chopped
- 1/2 c cilantro leaves, chopped
- 1/2 c fresh mint

Preparation
Step 1
Combine dressing (first 6 ingredients) in bowl and whisk until sugar dissolves
Put remaining ingredients in bowl but don’t mix or toss til one hour before serving
Keep chilled.
Eat within 2 days or it goes soggy
