Ingredients

  • Dressing:
  • 1/4 c fresh lime juice
  • 1 T light soy sauce
  • 1 tsp sesame oil (olive will do)
  • 1 T sugar
  • 1/2 tsp crushed red pepper (or more to taste)
  • 1/4 tsp salt
  • 3 mangos (firm, ripe, peeled, chopped)
  • 1 c blueberries
  • 1 large red pepper chopped
  • 1/2 c red onion, finely chopped
  • 1/2 c cilantro leaves, chopped
  • 1/2 c fresh mint

Preparation

Step 1

Combine dressing (first 6 ingredients) in bowl and whisk until sugar dissolves
Put remaining ingredients in bowl but don’t mix or toss til one hour before serving
Keep chilled.
Eat within 2 days or it goes soggy
