Lemon Curd Squares

Ingredients

  • Crust:
  • 2 cups all purpose flour
  • 1/2 cup confectioners sugar
  • 1 cup melted butter
  • Top layer:
  • 2 cups sugar
  • 1 tsp baking powder
  • 4 slightly beaten eggs
  • 1/4 cup lemon juice
  • 1 TBSP lemon rind

Preparation

Step 1

Oven at 350 F, line with parchment paper a 9"x13" pan
Crust:
Combine flour, confectioners sugar, and butter, mix well and press into pan.
Bake for 20 minutes.

Top layer:
2 cups sugar
1 tsp baking powder
4 slightly beaten eggs
1/4 cup lemon juice
1 TBSP lemon rind.
Combine these ingredients and pour over the baked warm crust.
Bake 25 minutes.
Chill.
Before serving cut in to squares, dust with confectioners sugar.
