Italian Chickpea Soup

Ingredients
- 6 cu veg stock
- 2 16oz can chickpeas
- 1 lg sweetpotato in 1/2 in cubes
- 2 med carrots cut 1/2in cube
- 1 med onion chopped
- 1 stalk celery 1/2 in cube
- 1 tbs yellow mustared
- 2 cloves garlic minced
- 1 bay leaf
- 1/2 tsp dries thyme
- 1/2 cup fresh parsley
- S&P to taste

Preparation
Step 1
In 4qt pan combine stock, chickpeas,potato, carrot,onion,celery,bay leaf and thyme.Bring to hard boil. Reduce heat to med low. Cover. Simmer fo 10-15 min, until veggies are tender.
Remove discard bay leaf Stir in parsley
