Ingredients

  • 6 cu veg stock
  • 2 16oz can chickpeas
  • 1 lg sweetpotato in 1/2 in cubes
  • 2 med carrots cut 1/2in cube
  • 1 med onion chopped
  • 1 stalk celery 1/2 in cube
  • 1 tbs yellow mustared
  • 2 cloves garlic minced
  • 1 bay leaf
  • 1/2 tsp dries thyme
  • 1/2 cup fresh parsley
  • S&P to taste

Preparation

Step 1

In 4qt pan combine stock, chickpeas,potato, carrot,onion,celery,bay leaf and thyme.Bring to hard boil. Reduce heat to med low. Cover. Simmer fo 10-15 min, until veggies are tender.
Remove discard bay leaf Stir in parsley
