Eggplant Tomato Pie

Ingredients

1 Pkg puff pastry cut into rounds
Bake 5 minutes @ 400.
1 C grated parm
2 sliced tomatoes
Basil leaves
Sliced fresh mozzarella

Preparation

Step 1

Bake rounds, remove and cool slightly. Place parm, 1 slice tomato, basil leaf and slice mozzarella on each round.
Reduce oven to 350 and bake 10 minutes.
