Ingredients

  • 3 C pitted tart cherries
  • 1/4 C cherry juice
  • 2/3 cup honey, or 1 cup sugar and 1/4 cup more juice
  • 2 1/2 T tapioca
  • 1/4 t almond extract
  • 1/8 t salt
  • 1 T butter
  • 9-inch pastry shell for 2-crust pie

Step 1

Mix cherries, juice, tapioca, salt, almond extract and honey together and let stand for 15 minutes. Pour into unbaked pastry shell. Dot with butter. Add full top crust, with slits to allow steam to escape, or make a lattice-top crust. Bake at 425 for 50 minutes.
