Ingredients

  • 6 lbs. tart apples (about 18 medium), peeled & quartered
  • 1 cup apple cider or juice
  • 3/4 cup sugar
  • 2 T lemon juice
  • 1 3” cinnamon stick
  • 1 t ground ginger
  • 1 t vanilla extract
  • 1/2 t ground nutmeg
  • 1/2 t ground mace
  • 1/2 t ground cardamom

Preparation

Step 1

Place all ingredients in a Dutch oven. Cover & cook over medium low heat for 30-40 minutes or until the apples are tender, stirring occasionally.
Remove from heat; discard the cinnamon stick. Mash the apples to desired consistency. Serve warm or cold. Yield: 9 cups
(I put in zip locks & freeze it)
