Ingredients

  • 2 lbs red potatoes
  • 5 tbsp Dijon mustard
  • 2 tbsp Olive Oil
  • 1 clove minced garlic
  • 1/2 tsp Italian seasoning

Preparation

Step 1

Heat oven to 425

Mix dijon mustard, olive oil, garlic and italian seasoning. Add the potatoes cut into chunks, toss to coat. Spoon into a baking dish coated w/ cooking spray.

Bake 35 to 40 minutes, or until fork tender, stir occasionaly
