Lemon Basmati Rice

Ingredients

  • 1 Tablespoon Canola Oil
  • 1/2 Cup Basmati Rice
  • 2 Tablespoons Fresh Lemon Juice
  • 1/4 Piece of Fresh Ginger
  • 1 Cup, low sodium chicken broth
  • 1 Cup frozen peas (Optional)
  • Salt & Pepper to taste

Preparation

Step 1

Heat oil in a small non-stick skillet over medium heat. Add rice and stir one minute. Add lemon juice, ginger and chicken broth. Bring to a boil, cover and simmer 10 minutes. Add peas, cover and cook 5 minutes. Remove ginger, add salt and pepper to taste and serve.
