Ingredients
- 1 4oz beef tenderloin steaks
- 1 t pepper
- 1/8 t salt
- Cooking spray
- 4 shallots, peeled and sliced
- 1 c beef broth
- 2 t Dijon
- Thyme springs

Preparation
Step 1
Preheat broiler. Sprinkle steaks with salt and pepper. Place on broiler pan coated with spray. Broil 5 minutes on each side or until done. Set aside. Place a nonstick skillet over medium high heat until hot. Coat shallots with cooking spray. Add to pan. Sauté 2 minutes. Add broth and bring to a boil. Cook 5 minutes. Stir in mustard. Spoon over steaks. Garnish with thyme. 2 servings (1 steak and ¼ c sauce) 232 calories.
