"Perfect Pinch Salad Supreme" Gnocchi

Ingredients

  • 4 servings protein (2 chicken breasts or ~20 shrimp)
  • 1 garlic clove, minced
  • 3 Roma tomatoes, diced into ~1/2 in. cubes
  • 1 yellow bell pepper, diced
  • 3/4 c. arugula
  • 1/2 T. tomato paste
  • 1 T. McCormick Perfect Pinch Salad Supreme seasoning
  • Gnocchi, cooked

Preparation

Step 1

1. Saute the garlic in olive oil or water in a skillet. Cook the protein with the sautéed garlic and some salt and pepper. When the protein is done cooking, remove it from the skillet.
2. Add the tomatoes and bell pepper to the skillet. Stir in the seasoning mix and the tomato paste. Cook down over medium heat until the desired consistency.
3. Add the protein back to the skillet to warm it up while the gnocchi boils in another pot.
4. Serve the sauce and protein over the gnocchi.
