Chicken with White Wine Garlic Sauce

This is Debbie's favorite chicken entrée from the Rusty Bucket in Plymouth.

Ingredients
- Sauce:
- 4 chicken breasts
- 1 tablespoon olive oil
- 2 tablespoon shallots, minced
- 2 tablespoons garlic, minced
- 4 ounces white wine
- 12 ounces chicken stock
- 1 tablespoon lemon juice
- 1 tablespoon flour
- salt and pepper as needed

Step 1
Sauce: can be made ahead and chilled.
1. Sweat garlic and shallots in oil until translucent.
2. Add flour and cook 3 to 4 min. to form roux.
3. De glaze with wine and lemon, cook 5 to 10 min. more.
4. Add stock and simmer on medium heat for 45 min.
5. Can use immediately or cover and chill for later use.
1. Cook chicken breast as preferred. Grilled, baked or sautéed. Use salt and pepper for seasoning.
2. If chilled, reheat sauce and pour over chicken.
