Smoked Salmon New Potatoes

Ingredients

  • 36 Sm. Red Potatoes
  • 1 Pkg. ( 8 oz. ) Cream Cheese, cubed
  • 2 Pkgs. ( 3 oz. each ) Smoked Cooked Salmon
  • 2 Tbsp. Green Onion, chopped
  • 2 Tsp. Dill Weed
  • 2 Tsp. Lemon Juice
  • 1/8 Tsp. Salt
  • 1/8 Tsp. Pepper
  • Fresh Dill Sprigs

Preparation

Step 1

Place the potatoes in a lg. saucepan & cover with water. Bring to a boil. Reduce heat; simmer, uncovered, for 20-22 min. or till tender. Meanwhile, in a food processor or blender, combine the cream cheese, salmon, onion, dill, lemon juice, salt & pepper. Cover & process till smooth; set aside. Drain potatoes & immediately place in ice water. Drain & pat dry with paper towels. Cut a thin slice off the bottom of each potato to allow it to sit flat. With a mellon baller, scoop out a small amount of potato. Pipe or spoon salmon mixture into potatoes. Garnish with fresh dill sprigs & serve.
