Ingredients
- 1 tablespoon olive oil
- 2 teaspoon soy cauce
- 1 teaspoon grated fresh ginger
- 2 large carrots, peeled and bias-sliced into 1/2 inch pieces
- 1 1/2 cups fresh green beans (6 oz.)
- cut into 2 inch pieces
- 5 or 6 small new potatoes ( 8 counces) halved
- 1 small onion cut into wedges
- Freshly ground black pepper
Preparation
Step 1
In a large bowl combine olive oil, soy sauce and ginger
Add carrots, green beans, potatoes and onion
Stir gently to coat vegetables with seasonings
Spread vegetables evenly in a 9 x 9 x 2 or 8 x 8 x 2 inch baking pan
Sprinkle with pepper
Roast vegetables uncovered in a 425 degree oven for 20 to 25 minutes or just until tender, stirring once or twice
