Ingredients
- 5 cu veg stock
- 2 cans chickpeas
- 1 lg sweet potato 1/2 in cubes
- 3 med carrots 1/2 in cubes
- 1 med onion chopped
- 1 stalk celery 1/2 in cubes
- 1 tbs yellow mustard
- 2 cloves garlic minced
- 1 bay leaf
- 1/2 tea dried thyme
- 1/3 cup parsley chopped

Preparation
Step 1
4 qt saucepan combine stock chickpeas potato carrots onion celery mustard garlic bay leaf and thyme. Bring to boil. Reduce heat med low Cover simmer 10-15 min till vegs are tender. Stir in parsley serve
