Ingredients
- 500 g. mascarpone cheese
- 5 eggs separated
- 5 Tbs. sugar
- 300 g. Lady Finger biscuits (Pavesini)
- 100 gms chocolate bar
- 6 cup of espresso
- 1 pinch of salt
Preparation
Step 1
Place the yolks and sugar into a bowl and beat with a fork until you have a pale, foamy paste. Add the mascarpone and continue beating until mixed well. In a separate bowl beat the egg whites with a small pinch of salt until stiff. Next fold in the stiffened egg whites to the cream mixture and mix thoroughly, though being careful not to collapse the mixture. Line a deep baking dish (9x13x2) with a first layer of the cream mixture. Dip the biscuits into the coffee then place a layer of biscuits over the cream making a complete cover. Continue in this way finishing with a layer of cream. Grate the chocolate and sprinkle over the Tiramisù. Allow to stand in the fridge for about 4 hours.
