Appetizer - Spinach Florentine

Spinach is a common ingredient used in Tuscan cuisine. This recipe is the most common spinach dish served in the area. It is very simple yet very delicious.

Ingredients

  • 1 kg. of spinach
  • 1 T. of olive oil
  • 1 t. red pepper flakes or powder
  • 3 cloves of garlic

Preparation

Step 1

Wash the spinach well and place in stock pan with a little water. As soon as cooked rinse the spinach under cold water delicately so that the spinach keeps its color, then squeeze out the excess water and then chop.
In a skillet with the oil, garlic(crushed) and the red pepper add in the spinach and cook high flame for about 10 minutes, stirring often. Usually this dish is served as a contorno although it is also very good served on toasted bread drizzled with olive oil.
