- Make 6-8 servings.
- 3-4 Tomatoes, ripe
- 1/4 cup of freshly torn Basil leaves
- Salt
- 6-8 slices of Italian or French bread, about 1/2 in thick
- 1-2 cloves Garlic
- Olive Oil
Preparation
Step 1
Chop the Tomatoes and remove the seeds and place in a colander with a pinch of salt and drain juice. After tomatoes have drained place in a bowl with basil and salt to taste then coat with olive oil to moisten. Toss and blend well. Set aside.
Toast sliced bread on a grill or toaster oven. Rub the warm bread with garlic. At this point drizzle bread with olive oil and add topping or add topping then add more olive oil. Serve immediately and enjoy!
Fettunta (meaning oiled sliced) is another version of a typical Toscana crostini. It is very simple recipe and very similar to bruschetta though it is made without the tomatoes. Simply toast the bread, rub with garlic and then top with salt, pepper and oil to taste. Fettunta is the base for other crostini that can be served with such toppings as spinaci fiorentina, olive paste or cannelloni beans.
