Peanut Dipping Sauce

Ingredients

  • 3 heaping tbs roasted unsalted peanuts
  • 1 cup unsweetened coconut milk
  • 1.5 tabs Panaeng Paste
  • 1 tbs palm sugar or brown sugar
  • 2 tea fish sauce
  • .5 tea instant tamarind dissolved in 2 tea hot water

Preparation

Step 1

1 In food processor, grind peanuts to coarse meal

2 In a medium skillet, bring .5 cup of coconut milk to a boil and then stir in Panaeng paste and stir and cook 1 min. reduce heat to medium heat and stir in sugar, fish sauce, tamarind water, ground peanuts, and .5 cup coconut milk. Simmer and stir constantly. Remove from heat and let cool. Fridge in covered jar up to 2 weeks.
