  • 1/4 cup butter or margarine 3/4 tsp. salt
  • 2/3 cup light brown sugar 1/3 cup shortening
  • 1 pound 4 1/2 oz. can pineapple slices 1 tsp. grated orange peel
  • 7 maraschino cherries 1 tsp. vanilla
  • 6 walnut halves 2/3 cup sugar
  • 1 1/4 cups sifted flour 1 large egg
  • 2 tsp. baking powder 1/2 cup milk
  • 1/3 cup of flaked coconut (optional)
  • 1 ) Melt butter in 9 or 10 in pan or skillet sprinkle on brown sugar.
  • 2 ) Drain pineapple arrange 7 slices in bottom of pan, place a cherry in center of each and walnut halves in between; cut remaining slices in half and place rounded side down against sides of pan; keep warm.
  • 3 ) Sift flour with baking powder and salt; cream shortening, orange peel and vanilla; slowly add sugar, beating until smooth and fluffy.
  • 4 ) Beat in egg; add flour alternately with milk, mixing until smooth; stir in coconut.
  • 5 ) Carefully spoon in batter over pineapple; bake at 350 about 55 min. or until done; let cake stand in pan or (skillet) 5-10 minutes before turning out upside down, onto serving plate; serve warm topped with whip cream.
