Broth - Fish

You can use this broth for risotto, soups, stews and also to cook the pasta when you are making fish recipes.

Ingredients
- 1 kilo of fish bones ( not salmon or sardines. )
- 1 celery stalk
- 1 carrots
- 1 leek
- 1 white onion
- 3 garlic cloves
- 1 glass of dry white wine
- bunch of parsley
- 10 white peppercorns
- 1 handfull of rock salt
- 3 litres of cold water
- 4 tbsp olive oil
Preparation
Step 1
Wash the bones very well and remove blood. Any remaining fish meat can be left. Cut the vegetables into chunky pieces. In a large saucepan place the vegetables, bones, salt, pepper & the crushed garlic ( not chopped but crushed with the back of a knife). The peppercorns will need to be crushed in the same way before pacing in the water. Also add the oil . Sautè all together for 5 mins , add the wine. When the wine evaporates, add the cold water. Cover, lower the flame and simmer together for 1.5 hours.
