Appetizer - Zucchini & Pomodoro

This is also good served with pilaf rice

Ingredients

  • 8 medium sized zucchini
  • 5 “roma” tomatoes- really ripe
  • 2 gloves of garlic
  • salt and pepper
  • 1 teaspoon of oregano

Preparation

Step 1

Wash and cut in medium cubes the zucchini and the tomatoes.
In a saucepan place the vegetables, 6 tablespoon of olive oil, salt and pepper and if you can find fresh oregan or thyme. Cover the pan and place on slow flame for about 30 minutes.
It’s better if you don’t turn the vegetables but instead to move the pan around.
Let set for 15 minutes before serving.
