Spinach Lasagna Rolls

Ingredients

  • 1/2 lb. ground mild Italian sausage (or ground turkey) - optional
  • 12 whole lasagna noodles
  • 1 egg
  • 1 - 15 oz carton ricotta cheese
  • 2 cups shredded mozzarella, divided
  • 1 - 10 oz pkg frozen spinach thawed and drained
  • 1 Tbls. Italian seasoning (Penzeys)
  • 1/2 tsp. granulated garlic (Penzeys) or 2 cloves garlic, minced
  • 1 - 26 oz. jar marinara sauce (we like Trader Joe's Tomato Basil)

Step 1

If using meat, heat 1 Tbls. olive oil in skillet over medium heat; brown sausage (or turkey) and crumble. Drain and set aside.

Bring large pot of water to boiling, then add lasagna noodles. Cook 10 mins, or until al dente. Drain and lay noodles out flat on a work surface (like a flexible cutting board).

Place egg in a medium bowl and beat slightly. Add ricotta, drained spinach, crumbled sausage, 1 cup of the mozzarella cheese, garlic and seasonings and stir to combine.

Spray bottom of 11X7 baking pan with olive oil spray. Take several spoonfuls of the cheese mixture and spread on a lasagna noodle. Starting at one end, roll the noodle with the mixture inside and place in the pan. Repeat with remaining noodles and filling. If extra filling is left over, you can put it in the pan around the lasagna rolls. Pour the marinara sauce over the top of the noodles and make sure it covers the rolls. Sprinkle with the remaining mozzarella cheese.

Bake at 350F for 30-35 mins until heated through and bubbly.
