Ingredients

  • Pork Tenderloin (3-4lb) Cut into 4 pieces and lightly pounded
  • 8oz can pineapple chunks, drained, save juice
  • 1/2 cup catsup
  • 1/4 cup rice vinegar
  • tsp hot sauce
  • 2 TBS soy sauce
  • 1 TBS butter
  • 3-4 cloves
  • 1/4 to 1/3 cup water
  • dash red chili flakes

Preparation

Step 1

Salt and pepper meat. In cast iron skillet brown pork in oil. 5-6 mins per side. Remove meat and sit aside.
In bowl mix catsup,vinegar, soy sauce, hot sauce,juice from pineapple,red pepper flakes.
Add butter to hot skillet and lightly brown pineapple chunks add sauce and water, add pineapple. When sauce thickens return meat to pan coating each piece with sauce. Cook until pork is done.

Serve over Rice

I add green bell pepper to saute with pineapple.
