Ingredients
- 2 cups whole bran cereal
- 1 1/4 cups milk
- 1/3 cup cooking oil
- 2 eggs, beaten
- 1 1/2 cups shredded carrots
- 1/2 cup coconut
- 1/2 cup raisins
- 1 1/4 cups all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 1/2 tsp salt
Preparation
Step 1
In a large mixing bowl combine cereal, milk, oil and eggs. Let stand 10 minutes. Stir in carrot, coconut and raisins.
In another bowl combine flour, sugars, baking powder, baking soda, cinnamon and salt. Add cereal mixture to flour mixture. Stir just until combined. Grease muffin cups or line with paper bake cups; fill each 2/3 full. Bake in a 375 F oven for 15 to 20 minutes or until toothpick inserted near center comes out clean. Serve warm.
