Breakfast Casserole

Perfect for a large gathering for breakfast.

Ingredients

  • 1 dozen eggs
  • 2 pounds shredded or cubed ham
  • 1 package O'brien potatoes
  • 1/4 cup green pepper, chopped
  • 1/4 cup onion, chopped
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 cup grated cheese

Preparation

Step 1

1. Preheat oven to 350 degrees F. Grease 9x13 inch baking dish.

2. Mix potatoes, green pepper, onions, and ham; put in pan. Mix eggs with soup and milk; pour over potatoes. Top with cheese.

3. Bake uncovered for 1 to 1 1/2 hours.
