Multi-bean salad

Ingredients

  • 1 cup each green and yellow beans, trimmed and cut into 1-inch pieces
  • 1 540ml can mixed beans, drained and rinsed
  • 1/4 cup parsley
  • 1/4 cup red-wine vinegar
  • 2 tbsp. olive oil
  • 2 tbsp. honey
  • 1 tsp. Dijon mustard
  • salt and pepper to taste

Preparation

Step 1

Cook in a large saucepan of boiling water for 3 mins. Drain and rinse with cold water. Pat dry. Whisk vinegar with oil, honey and Dijon in a medium bowl. Add all beans. Sprinkle with parsley and stir until coated.
