Cheesy Cornbread Soup

Ingredients

  • 1 c onion, chopped
  • 6 T butter
  • 8 1/2-oz pkg. cornbread mix
  • 2 14 1/2 oz. cans chicken broth
  • 1 14 1/2 0z cans creamed corn
  • 1 c shredded cheddar cheese
  • 2 c whipping cream
  • Garnish: additional shredded cheddar cheese

Preparation

Step 1

In stockpot over medium heat, saute onion in butter. STir in dry cornbread mix. Stir in broth and corn until smooth. Fold in cheese; stir to melt. Just before serving, stir in cream; heat through but do not boil. Garnish with additional cheese.
