Ingredients
- 1 tsp. olive oil
- 1 cup chopped red onions
- 2 cloves garlic, minced
- 1 can diced tomatoes, undrained
- 3 tbsp. tomato paste
- 1 tbsp. each red wine vinegar and brown sugar
- 2 tsp. dried basil
- 1 tsp. dried oregano
- 1/2 tsp.salt
- 1/4 tsp. each pepper and crushed red pepper flakes
- 12 oz. linguini, uncooked
- cooked shrimp, defrosted
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Preparation
Step 1
Heat olive oil in large, non-stick pan over medium heat. Add onions and garlic. Cook and stir for 3-4 mins until onions are softened. Add diced tomatoes and the liquid, tomato paste, vinegar, brown sugar, basil, oregano, salt, pepper and red pepper flakes. Bring to a boil. Reduce heat to medium-low. Simmer, uncovered for 20 mins. until sauce has thickened. Meanwhile, prepare linguini according to directions. Drain well and keep warm. Add shrimp and parsley to sauce. Simmer for 5 more mins. Serve sauce over linguini. Sprinkle with Parmesan.
