Ingredients
- 1 2 1/2 lb chuck roast, trimmed
- 3/4 t salt, divided
- 1/4 t pepper
- Cooking spray
- 1 16 oz pkg baby carrots
- 1 14.5 oz can Italian stewed tomatoes
- 1 medium onion, thinly sliced
- 1/3 c tomato paste

Preparation
Step 1
1. Sprinkle roast with ½ t salt and 1/8 t pepper
2. Heat skillet over medium high heat. Coat pan with cooking spray. Add roast and cook 2 minutes on each side until lightly browned. Remove and set aside.
3. Combine carrots, tomatoes, onion, tomato paste, and remaining salt and pepper in a 6 qt. slow cooker. Add roast. Cover and cook on low 8 hours or until beef is tender.
4. Remove roast to platter. Cover and keep warm. Transfer sauce to large measuring cup. Let stand 5 minutes. Discard fat. Serve sauce with roast.
