CHICKEN A LA KING # 3
THIS CAN ALSO BE MADE WITH LEFTOVER TURKEY. Serve over puff pastry patty shells or rice.
I cut back the flour from 1/4 cup to 1/8th and found it was a good consistency.

Ingredients
- 1 cup sliced fresh mushrooms
- 1/4 cup diced red pepper
- 2 tbsp hard margarine (butter)
- 2 tbsp hard margarine
- 1/4 cup all purpose flour
- 1/8 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups milk, room temperatuare
- 1 tbsp white (or alcohol free) wine
- 3/4 cup frozen peas
- 2 cups diced cooked chicken
Preparation
Step 1
Saute mushrooms and red pepper in first amount of margarine in large frying pan until soft.
Add second amount of margarine. Stir until melted. Add flour, cayenne pepper, salt and pepper. Stir until smooth. Gradually stir in milk and wine. Heat and stir until boiling and thickened.
Add peas and chicken. Stir. Heat on low, stirring occasionally, until heated through and peas are cooked.
