Step 1

After topping and tailing the carrots I scrubbed them in a bowl of water to remove any dirt.

You may wish to peel your carrots if you have any worries about pesticides.

Chop them into 2-4mm slices and place them on the dryer trays.

After a few hours drying you can condense the trays down. I have placed a mesh sheet on the tray to stop the carrots dropping through.

After about 10 hours the carrots will be crisp to the touch and could be stored away for future use.

Dried carrots can be used directly in stews and casseroles but remember they will absorb a lot of water.

I processed the carrots in my blender to produce a fine powder.
