  • 3 3/4 c. flour
  • 2/3 c. sugar
  • 1 tbsp. caraway seeds
  • 2 1/4 tsp. baking soda
  • 3/4 tsp. salt
  • 1 c. dried fruit bits
  • 1 1/2 c. buttermilk
  • 2 eggs

Preparation

Step 1

Preheat oven to 325.
In lg. bowl,combine flour,sugar,caraway seeds,soda and salt;add fruit bits.
Stir in buttermilk and 1 egg until dough forms.

On lightly floured surface,knead dough until smooth,about 2 mins.
Shape into round loaf.
Place on ungreased cookie sheet.
With serrated knife,cut 1/2 deep X into top.
Lightly beat remaining egg;brush over dough.
Bake 50-55 mins. or until loaf sounds hollow when tapped on bottom.
Transfer from pan to rack;cool.
