- 2 tbs kosher salt
- 1 1/2 tbs pepper
- 1 tbs sage (rubbed or ground)
- 1 1/2 tsp ginger
- 1 1/2 tsp nutmeg
- 1 1/2 tsp thyme

Step 1
disolve all seasoning in 1-1 1/2 cups ice water
grind meat and pour seasoning over meat mix by hand
