Chocolate Covered Oreo Cookie Cake
- 1 package devil’s food chocolate cake mix
- 4 squares Baker’s semi-sweet chocolate
- 1/4 cup butter, cut up
- 1 250g package cream cheese, softened
- 1/2 cup white sugar
- 2 cups Cool Whip
- 12 oreo cookies, coarsely crushed
Preheat oven to 350. Prepare and bake cake mix as directed on package in 2 nine inch round cake pans. Cool in pans for 5 minutes. Invert onto wire rack. Remove from pans and cool completely
Melt chocolate in small microwaveable bowl on MEDIUM for 3 to 4 minutes or until chocolate is melted, stirring every 30 seconds. Blend in butter. Set aside to slightly thicken, about 5 minutes.
Beat cream cheese and sugar in large bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping and crushed cookies.
Place one of the cake layers on serving plate, top-side down. Spread top of cake layer evenly with the cream cheese mixture. Place remaining cake layer on top, top side up. Spoon glaze to cover top of the cake only.
