Swedish Meatballs

Ingredients
- 2 pounds ground beef
- 1/2 cup onion, finely chopped
- 1 cup bread crumbs
- 2 eggs, beaten
- 1 teaspoon salt
- 1/4 teaspoon white pepper
- 1/2 cup milk
- 1/2 teaspoon ground ginger
- 1/2 teaspoon allspice
- 1/2 teaspoon dried dill weed
- 1/4 cup vegetable oil
- 1/4 cup beef broth
- 1/2 cup light sour cream
- Fresh parsley (optional)
Preparation
Step 1
Mix together beef, onions, bread crumbs, eggs, salt, pepper, milk and spices in a large bowl. Refrigerate 1 hour.
Roll beef mixture into 2-inch balls and place on rimmed baking sheet.
Heat oil in large skillet on medium. Place meatballs in skillet in two batches, turning every 1-2 minutes until brown on all sides. Lower heat and simmer for about 10 minutes.
Transfer meatballs to a plate and discard all but 1 tablespoon of oil. Place skillet back on burner and return the meatballs. (They should all fit after shrinkage.)
Mix beef broth and sour cream in a small bowl and pour over meatballs.
Simmer gently another 5-10 minutes, stirring occasionally, until heated through. Transfer to rimmed platter lined with fresh parsley sprigs and serve.
