Gazpacho #2

Ingredients

  • 1 cup tomato juice
  • 1 Tbs wine vinegar
  • 3 Tbs olive oil
  • 1 clove garlic; crushed
  • 1/4 tsp salt
  • 1 md onion; peeled & quartered
  • 4 lg very ripe tomatoes; peeled & chopped
  • 1 lg cucumber; peeled & chopped
  • 1 green pepper (bell or chili); seeded & quartered
  • 1 tsp cilantro (fresh) minced
  • fresh ground black pepper

Preparation

Step 1

Place first 6 ingredients in food processor - mix for a few seconds. Add remaining ingredients and blend til smooth. Chill for at least 1 hour before serving. Serve in bowls lined with lettuce leaves.
