- 1 1/2 cups pecan pieces
- 6 tbsp. butter
- 1 1/2 cups sugar
- 3/4 cup firmly packed light brown sugar
- 1/2 cup milk
- 1 tbsp. instant coffee granules
- 1 tsp. vanilla extract

Preheat oven to 275. Plac pecans on baking sheet, Bake for 20 to 25 minutes or until slightly brown.
Melt butter in a large saucepan over medium-high heat. Add pecans, sugar, brown sugar, milk, coffee and vanilla, stirring until well blended. Cook over low heat, stirring gently, until sugar dissolves. Cover and cook over medium heat 2-3 minutes to wash down sugar crystals from sides of pan. Uncover and cook to soft ball stage (234 to 240) stirring constantly.
Remove from heat. Beat with a wooden spoon just until mixture begins to thicken. Working quickly, drop by spoonfuls onto buttered waxed paper; let cool until set.
