Provençale Chicken Supper

This is a simple slow-cooker dish and lovely served with either cooked penne or mashed potato.

Ingredients

  • 4 skinless, boneless chicken breasts or 8 boneless, skinless chicken thighs, chopped into pieces
  • 2 teaspoons dried basil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup diced yellow bell pepper
  • 1 (16-ounce) can cannellini beans or other white beans, rinsed and drained
  • 1 (14 1/2-ounce) can chopped tomatoes
  • 1 tsp italian herbs

Preparation

Step 1

Place all ingredients in a slow cooker. Cover and cook on low for 8 hours.
