Ingredients
- 1 lb. ground pork sausage
- 2 1/2 c. potatoes, peeled and cubed
- 2 red peppers, diced
- 4 green onions, chopped
- Optional: 1-2 oil
- 1 1/2 t. paprika
- 1 1/2 t. dried thyme
- salt and pepper to taste
- 6 eggs
- Garnish: chopped fresh parsley
Preparation
Step 1
In a large skillet over medium heat, cook sausage until browned. Drain sausage and set side, leaving some drippings in skillet. dd potatoes, peppers and onions to skillet. Cook until potatoes are tender, crisp and golden, about 8 minutes, stirring frequently and adding oil to skillet if needed. Stir in sausage and seasoning. make 6 wells in mixture with a spoon; break an egg itno each. Reduce heat to low; cover and cook until eggs are cooked to desired doneness. sprinkle with parsley.
